Lemon Immunity Potion

It’s been a funny few month this year. I’ve been sick twice already- the first time I must have caught a virus that made it it’s mission to clear out my lungs of any mucus that has been building up there over the last few years. Now it’s my sinuses. I feel like I am sneezing out parts of my brain at this rate. But slowly I am getting better. I just need to learn the lesson that I am teaching everyone else for years now – Radical Self Love. I have cancelled my classes, cancelled my day job as a substitute teacher, skipping any physical practice and am not going anywhere. I am staying in bed today and do, what I love to do. I write.

And while I was writing today, I got a craving for lemons – whole lemons. Then I remembered a recipe a friend of mine once gave me. The lemon immunity potion, as I call it. The first time I tried it, my face must have literally lit up – it’s easily the most refreshing, creamy, satisfying shake I’ve had and I made it many times since.

In the summer, I would freeze it in ice lolly moulds for the kids (and myself…). When I feel like I am coming down with a flu but I am also hot and need something more refreshing than a tea, I also make it. I actually believe it has magic powers.

Maybe it is the fact that it contains a whole lemon, pits and peel and everything. Or maybe it’s the copious amount of local honey. But what makes it extra special is neither of it. It’s the special guest appearance of … drum roll…. CASHEW NUTS. Cashew nuts are full of magnesium, copper, zinc and other minerals, contain B Vitamins and plenty of antioxidants that are great for inflammation. And of course they are oh so tasty!

So I will not hold back the secret – here it is, just for you:

The Lemon Immunity Potion Recipe

You will need:

1 whole, washed, organic lemon (chopped or quartered)

1 small handful of cashews (or at least 2 Tablespoons full – the more, the creamier and thicker it will be)

2 Tablespoons of local honey

1 cup of water

a few ice cubes (important!)

some fresh Vanilla (completely optional)

Put everything into a blender (I hope you have a strong one!) and blend until it is smooth and creamy.

And then enjoy and watch, as you will start to feel better!
